I tested this German apple cake and it was absolutely stunning, so I would like to share this recipe with you, which incorporates apples as symbol for the second harvest, cinnamon to warm you in times when the temperatures are starting to get a bit nippy and the golden colour of the setting sun.

Ingredients - just half for a smaller cake

1,5 kg (3 lbs) tart apples
125g soft butter
125g sugar
250g plain flour
3 medium sized eggs
1/2 pack of baking powder
2-3 tsp cinnamon
pinch of nutmeg
1-2 tsp brown sugar

Method

Preheat the oven to 180 C fan.

Peel and cut the apples into smallish pieces.
Add the cinnamon, the nutmeg and the brown sugar to the apples and mix well.
Set aside.

Whisk the soft butter, eggs and sugar until smooth and add the flour and baking powder.
Add the apples. You will notice that there is more apples than dough but that is how you want it, so don't worry.

Butter and flour a 26cm spring form and smooth out the mix as well as you can.

Bake at 180C for about 40-45 minutes. You know your oven best, so just test the result after the time to see if it takes a little longer.
